We grow 5 different varieties of summer squash at Evolve Farm. Each offers their own unique qualities.  

  1. Golden Glory:

Sautéed Summer Squash Medley

Ingredients:

  • 2 medium zucchinis, sliced
  • 2 medium yellow squash, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Directions:

  1. In a skillet, heat olive oil over medium heat.
  2. Add minced garlic and sauté for 1 minute.
  3. Add sliced squash, season with salt and pepper, and sauté until tender (about 5-7 minutes). Serve warm!

Stuffed Summer Squash

Ingredients:

  • 2 medium zucchini, halved lengthwise
  • 1 cup cooked quinoa
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheese (optional)
  • 1 tsp Italian seasoning

Directions:

  1. Preheat oven to 375°F (190°C).
  2. Scoop out the center of each zucchini half.
  3. Mix quinoa, diced tomatoes, Italian seasoning, and half the cheese in a bowl.
  4. Stuff the mixture into the zucchini halves, top with remaining cheese.
  5. Bake for 25 minutes, until tender.

Grilled Summer Squash

Ingredients:

  • 2 medium zucchinis (Kefren), sliced into rounds
  • 2 medium yellow squash (Goldfinch), sliced into rounds
  • 2 tbsp olive oil
  • Salt and pepper to taste

Directions:

  1. Preheat grill to medium heat.
  2. Toss sliced squash with olive oil, salt, and pepper.
  3. Place squash on the grill and cook for 4-5 minutes on each side until tender and grill marks appear. Enjoy as a side dish!

Easy Zucchini Bread

Ingredients:

  • 1 ½ cups grated zucchini
  • 1 ½ cups flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • ½ cup oil or melted butter
  • 2 eggs
  • 1 tsp vanilla extract
  • Optional: ½ cup nuts or chocolate chips

Instructions:

  1. Preheat Oven: Preheat to 350°F (175°C) and grease a 9×5-inch loaf pan.

  2. Mix Wet Ingredients: In a bowl, whisk together sugars, oil, eggs, and vanilla.

  3. Mix Dry Ingredients: In another bowl, combine flour, baking powder, baking soda, salt, and cinnamon.

  4. Combine: Stir dry ingredients into wet ingredients, then fold in zucchini and optional add-ins.

  5. Bake: Pour into the pan and bake for 50-60 minutes, until a toothpick comes out clean.
